Ginger-Plum Pork Cutlets
Prep: 10 min, Cook: 15 min.
  • 4 pork cutlets, 1/4 inch thick
  • 1 cup plum preserves
  • 2 tsp. ginger, or 1 Tbs. fresh, grated
  • 3 Tbs. cider vinegar
  • 1 tsp. vegetable oil

Place pork between 2 sheets of wax paper and pound lightly with a mallet or other heavy flat object to flatten to 1/4 inch thickness. Set aside. Combine remaining ingredients, except oil, in a bowl. Heat oil in a heavy nonstick skillet over medium high heat. Cook pork about 1 minute until browned. Turn pork and add plum mixture to skillet. Cover, reduce heat and simmer 8-10 minutes.
