Tuna Fish Curry

- 1 cup water
- 1 cup instant rice
- 2 tsp. oil
- 1 apple, peeled and chopped
- 2 tsp. curry powder
- 1 cup tomato sauce
- 2 Tbs. apple juice
- 1/2 lb. white tuna in water, drained
Bring water to a boil in a saucepan over high heat. Stir in rice, cover pan and remove from heat. Let stand 5 minutes. Fluff with a fork. Cover and keep warm. Heat oil in a wok over medium high heat. Reduce heat to medium and stir fry apple 1-2 minutes. Stir in curry powder. Pour in tomato sauce and bring to a boil. Add juice and tuna. Stir until heated throughout. Serve over rice.
