Classic Potato, Onion & Ham Pizza
Prep: 15 min, Cook: 35 min.
  • 3 Tbs. unsalted butter or olive oil
  • 3 new potatoes, cut in 1/4 inch slices
  • 2 onions, cut in 1/4 inch slices
  • 1 Tbs. garlic, coarsely chopped
  • 1 bread shell pizza crust, about 1 lb. each
  • 1/2 lb. shredded mozzarella cheese
  • 1/4 lb. deli ham, thinly sliced
  • 1/4 lb. Provolone cheese, sliced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh Italian parsley, chopped

Preheat oven to 400°F. Melt 2 Tbs. butter in a heavy nonstick skillet over medium heat. Stir in potatoes, onions, garlic and salt and pepper to taste. Cook 12-15 minutes over medium heat, turning occasionally. Stir in remaining butter. Cook 5-7 minutes, until potatoes are golden brown. Sprinkle mozzarella on bread shell. Top with ham slices. Place potato mixture over ham. Top with provolone slices. Sprinkle with Parmesan and parsley. Bake directly on oven rack 15-20 minutes or until cheese is melted.
