Kosher Apple Matzo Kugel
Prep: 10 min, Cook: 45 min.
  • 4 matzos
  • 3 eggs
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1/4 cup Passover margarine
  • 1 tsp. cinnamon
  • 1/2 cup chopped walnuts
  • 2 apples, peeled and chopped
  • 1/2 cup raisins

Preheat oven to 350°F. Break matzo and soak until soft. Drain, but do not squeeze dry. Combine next 4 ingredients and half the margarine in a bowl. Add matzo.

Stir in chopped walnuts, apples and raisins. Pour mixture into a buttered casserole dish. Dot with remaining margarine. Bake about 45 minutes until golden.
