Preheat oven to 375°F. Combine sugar, cinnamon, salt and matzo meal in a bowl. Combine egg yolks, oil, lemon juice and grated rind in another bowl and stir into dry ingredients. Beat egg whites in a separate bowl until stiff. Fold into batter. Pour half of batter into a greased 8x8 inch pan. Cover batter with sliced apples. Sprinkle with remaining batter. Bake 45 minutes. Cool completely before cutting into squares. This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only.
