Passover Apple Squares
Prep: 15 min, Cook: 45 min.
  • 1-1/2 cups sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 cup matzo meal
  • 3 eggs, separated
  • 1/2 cup peanut oil
  • 1 lemon, juiced and rind grated
  • 2 large apples, peeled and thinly sliced

Preheat oven to 375°F. Combine sugar, cinnamon, salt and matzo meal in a bowl. Combine egg yolks, oil, lemon juice and grated rind in another bowl and stir into dry ingredients. Beat egg whites in a separate bowl until stiff. Fold into batter. Pour half of batter into a greased 8x8 inch pan. Cover batter with sliced apples. Sprinkle with remaining batter. Bake 45 minutes. Cool completely before cutting into squares.
