Poached Peaches in Puff Pastry
Prep: 10 min, Cook: 10 min.
  • 4 frozen puff pastry shells
  • 1 cup sugar
  • 1 Tbs. vanilla extract
  • 1 cup water
  • 4 large ripe peaches, peeled, halved and pitted
  • 1/4 cup plus 2 Tbs. brandy or rum
  • 1 Tbs. peach liqueur or apple brandy
  • 2 cups vanilla frozen yogurt

Bake puff pastry shells according to package directions. Combine sugar, vanilla and water in a large heavy saucepan over high heat and bring to a boil. Boil 5 minutes. Add peaches and cook 3 minutes per side. Transfer peach halves to a heavy nonstick skillet, reserving syrup. Add brandy and peach liqueur to skillet with peaches. Keeping face and body away from skillet, ignite quickly with a lit match. When flames subside, remove from heat. Just before serving, spoon peaches and reserved syrup into baked puff pastry shells. Serve with frozen yogurt.
