Lorrie's Chocolate Cake with Vanilla Sauce
Prep: 10 min, Cook: 30 min.
  • 2 cups all purpose flour
  • 1-3/4 cups sugar
  • 1/2 cup cocoa powder
  • 1 Tbs. baking soda
  • 1 tsp. salt (optional)
  • 1 cup buttermilk
  • 2/3 cup vegetable oil
  • 1 tsp. vanilla extract
  • 1 egg, lightly beaten
  • 1 cup hot strong brewed coffee
  • 1 cup sugar
  • 2 Tbs. cornstarch
  • 1 cup water
  • 2 Tbs. unsalted butter
  • 1 tsp. vanilla extract

Preheat oven to 350°F. Sift first 5 ingredients together in a bowl. Add next 5 ingredients and combine. Batter will be thin. Pour into a buttered and floured 9x13 inch baking pan. Bake 30 minutes or until tester comes out clean when inserted in center. Combine sugar and cornstarch in a heavy saucepan. Add water. Bring to a boil over medium high heat, stirring constantly. When mixture begins to thicken, remove from heat. Stir in butter and vanilla. Serve sauce over cake.
