Lower Fat Creamed Turnips
Prep: 10 min, Cook: 10 min.
  • 1-1/4 lbs. turnip, peeled and shredded
  • 1/4 tsp. baking soda
  • 1 tsp. unsalted butter
  • 1/4 cup evaporated skim milk

Place turnips in a heavy saucepan with just enough water to cover. Bring to a boil over high heat. Remove from heat and quickly stir in baking soda to remove bitterness. Drain turnips. Rinse under cold water and drain again. Return to saucepan over medium heat. Add remaining ingredients and salt and pepper to taste. Stir occasionally until mixture is hot. Do not boil.
