Mixed Salad with Avocado and Cucumber
Prep: 10 min.
  • 1 lb. european or garden salad
  • 1 cucumber, peeled, seeded and thinly sliced
  • 1 avocado, peeled and cut into chunks
  • 1/4 cup olive oil
  • 1-1/2 Tbs. white wine vinegar
  • 1 tsp. Dijon mustard
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. pepper

Combine lettuce, cucumber and avocado in a salad bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Add enough dressing to coat salad and toss.
