Cream Cheese Parfaits with Grapes
Prep: 15 min.
  • 1/2 cup maple syrup, more if desired
  • 2-1/2 cups red seedless grapes, halved
  • 1/4 lb. light cream cheese, softened
  • 1/3 cup confectioner's sugar
  • 1 tsp. vanilla extract
  • 1 cup heavy cream, chilled

Combine maple syrup and all but 1/4 cup grapes in a mixing bowl. Set aside. Using an electric mixer, beat cream cheese, sugar and vanilla in mixing bowl until light and fluffy. Whip cream in another mixing bowl to soft peaks. Fold whipped cream into cream cheese mixture. Fold in grapes coated in maple syrup. Serve in individual parfait glasses and garnish with reserved grapes.
