Canadian Baked Eggs
Prep: 5 min, Cook: 15 min.
  • 4 slices of Canadian bacon
  • 8 eggs
  • 1-1/2 cups shredded fat-free cheddar cheese
  • 2 tsp. parsley, finely chopped

Preheat oven to 325°F. Line bottom of 4 lightly buttered shallow ramekins or individual gratin dishes with bacon, cutting to fit, if necessary. Carefully break 2 eggs into each dish. Sprinkle cheese over top and bake 12-15 minutes, until whites are just set and cheese is melted. Sprinkle with parsley and pepper to taste before serving.
