Broccoli au Gratin
Prep: 10 min, Cook: 30 min.
  • 1 lb. broccoli florets
  • 2 Tbs. plus 2 tsp. olive oil
  • 2 Tbs. all purpose flour
  • 2 cups skim milk, warm
  • 1/4 tsp. white pepper
  • 1/4 tsp. ground nutmeg
  • 1/4 lb. shredded cheddar cheese
  • 1/2 cup plain breadcrumbs

Preheat oven to 350°F. Place broccoli in a steamer basket over boiling water. Cover saucepan and steam 5 minutes. Arrange broccoli in a casserole dish and set aside. Heat oil in a saucepan over medium heat. Add flour and cook 2 minutes, stirring constantly. Very gradually whisk in milk. Season with white pepper, nutmeg and salt to taste. Cook 5-7 minutes, whisking frequently, or until sauce thickens and is smooth. Pour sauce over broccoli. Sprinkle with cheese and breadcrumbs and bake 15 minutes or until top is lightly browned.
