Mediterranean New Potatoes
Prep: 10 min, Cook: 20 min.
  • 1-1/4 lbs. small new potatoes, scrubbed
  • 3 Tbs. olive oil
  • 1/4 cup white wine vinegar
  • 4 scallions, finely chopped
  • 1/2 tsp. oregano, or 2 Tbs. fresh, chopped
  • 1/8 tsp. black pepper, or to taste

Boil potatoes in a medium saucepan 20 minutes, or until tender. Combine oil and vinegar in a jar with a tight-fitting lid. Shake vigorously. Add scallions, oregano, and pepper to taste. Shake again. Cut warm potatoes into halves or quarters. Place in a serving bowl, add dressing, and toss.
