Chocolate Peanut Butter Pudding
Prep: 10 min, Cook: 5 min.
  • 1 cup sugar
  • 3 Tbs. cornstarch
  • 3 Tbs. cocoa powder, heaping
  • 3 Tbs. all purpose flour
  • 3 cups lowfat milk
  • 3 egg yolks
  • 1/2 cup chunky peanut butter
  • 2 tsp. unsalted butter
  • 1 tsp. vanilla extract

Combine first 4 ingredients in a heavy non-reactive saucepan. Stir in milk and egg yolks. Bring to a boil over medium high heat, stirring constantly. Immediately remove from heat. Stir in peanut butter, butter and vanilla until butter is melted. Mix thoroughly. Transfer to a serving bowl. Press plastic wrap over pudding surface to prevent skin from forming. Serve warm or cold.
