Broiled Pineapple and Coconut
Prep: 5 min, Cook: 5 min.
  • 1/2 lb. pineapple chunks
  • 1/4 cup brown sugar
  • 1 Tbs. plus 1 tsp. unsalted butter, melted
  • 2 Tbs. sweetened flaked coconut

Turn on broiler. Lightly butter a flameproof baking dish with 2 inch sides. Arrange pineapple in a single layer. Sprinkle with brown sugar. Drizzle with melted butter. Broil pineapple 4 inches from heat source 2 minutes, or until top is browned and bubbling. Remove from broiler. Sprinkle with coconut and broil another 30 seconds.
