Green Bean Parmesan

- 2 tsp. olive oil
- 1 green bell pepper, seeded and diced
- 1/4 cup onion, chopped
- 1 clove garlic, crushed
- 1 lb. canned green beans, drained
- 2 Tbs. vegetable stock
- 1/2 tsp. basil, or 1-1/2 tsp. fresh, chopped
- 3 Tbs. grated Parmesan cheese
Heat oil in a heavy nonstick skillet over medium heat. Sauté bell pepper, onion and garlic 3 minutes or until onion is translucent. Stir in beans, stock, basil and salt to taste.
Cover skillet and cook 5-10 minutes or until beans are heated through. Stir in Parmesan and serve.
