Turkey with Shallots
Prep: 10 min, Cook: 20 min.
  • 2 Tbs. unsalted butter
  • 4 turkey breast fillets, about 6 ounces each
  • 8 shallots, peeled and halved lengthwise
  • 1/2 cup dry white wine
  • 1/8 tsp. salt (optional)

Preheat oven to 375°F. Melt half the butter in a heavy ovenproof skillet over medium-high heat. Add turkey and shallots. Sear turkey 2 minutes per side, or until browned. Transfer skillet to oven and bake 12-15 minutes or until turkey is opaque throughout. Transfer turkey and shallots to a platter. Place skillet over medium-high heat. Add wine to skillet, stirring with a wooden spoon to deglaze. Boil until liquid is reduced by half. Remove from heat. Whisk in remaining butter. Season with salt and pepper to taste. Cut turkey diagonally into thin slices and serve with sauce.
