Stewed Dried Fruit with Ginger
Prep: 5 min, Cook: 35 min.
  • 1/2 cup dried prunes
  • 1/2 cup dried figs, washed and drained
  • 1 cup dried apricots, washed and drained
  • 1 lemon, sliced
  • 1 tsp. fresh ginger, minced
  • 4 cups water
  • 1 cup sugar

Combine all ingredients, except sugar, in a heavy saucepan. Bring to a boil over medium high heat. Reduce heat to low. Stir in sugar and simmer 5 minutes or until sugar is dissolved. Cover and simmer 30 minutes or until fruit is tender. Using a slotted spoon, remove fruit from syrup. Serve fruit warm or chilled.
