Sweet Farina Pudding

- 2 cups skim milk
- 1/8 tsp. salt (optional)
- 1/3 cup farina or cream of wheat
- 2 Tbs. walnuts, chopped
- 1/3 cup raisins
- 1/2 tsp. vanilla extract
- 2 Tbs. molasses
- 2 tsp. unsalted butter
Preheat oven to 350°F. Combine milk and salt in a heavy saucepan over high heat. Bring to a boil. Lower heat to medium and slowly stir in farina. Cook 4-5 minutes or until mixture thickens. Stir in next 4 ingredients. Add half the butter. Transfer mixture into a buttered shallow baking dish. Dot with remaining butter and bake 15 minutes or until top is golden.
