Lighter Veggie Salad

- 1/2 lb. zucchini, cut into thin strips
- 1/2 lb. fresh carrots, cut into thin strips
- 1/2 lb. turnips, cut into thin strips
- 1/4 cup Italian dressing
- 1/2 tsp. salt (optional), or to taste
- 1/4 cup parsley, minced
Combine first 3 ingredients in a salad bowl. Pour dressing over vegetables. Season with salt and pepper to taste. Sprinkle with parsley and toss.
