Lighter Veggie Salad
Prep: 15 min.
  • 1/2 lb. zucchini, cut into thin strips
  • 1/2 lb. fresh carrots, cut into thin strips
  • 1/2 lb. turnips, cut into thin strips
  • 1/4 cup Italian dressing
  • 1/2 tsp. salt (optional), or to taste
  • 1/4 cup parsley, minced

Combine first 3 ingredients in a salad bowl. Pour dressing over vegetables. Season with salt and pepper to taste. Sprinkle with parsley and toss.
