Potatoes with Lemon and Cilantro
Prep: 10 min, Cook: 15 min.
  • 1 lb. small new potatoes
  • 1 Tbs. plus 1 tsp. unsalted butter
  • 1 tsp. lemon zest
  • 1-1/2 tsp. lemon juice
  • 2 Tbs. cilantro or parsley, minced

Cook potatoes in boiling water 12 minutes or until tender. Drain. Cool slightly and peel skins with a sharp knife or your fingers. Melt butter in a large skillet over medium low heat. Add lemon zest, juice, and cilantro. Add potatoes and stir until coated. Season with salt and pepper to taste.
