Braised Onions with Blue Cheese

- 1 Tbs. olive oil
- 2 large red onions, cut into 1/2 inch slices
- 1 cup vegetable stock
- 1/4 lb. blue cheese, crumbled
- 1/4 cup dried breadcrumbs
- 2 Tbs. port wine (optional)
- 2 Tbs. unsalted butter
Heat oil in a heavy nonstick skillet over medium heat. Sauté onion slices in a single layer 2-3 minutes per side or until browned. Add stock and bring to a boil. Reduce heat to medium low. Cover skillet and simmer 10 minutes or until onions are tender. Transfer onion slices to a baking dish. Add wine to same skillet, stirring with a wooden spoon to deglaze. Simmer 2 minutes or until mixture is reduced to 1/2 cup. Remove from heat. Whisk in butter 1 Tbs. at a time. Turn on broiler. Season onion slices with salt and pepper to taste. Sprinkle with blue cheese and breadcrumbs. Place under broiler 1 minute or until breadcrumbs are golden brown. Serve sauce over onions.
