Glazed Carrots
Prep: 10 min, Cook: 20 min.
  • 1 lb. carrots, peeled and cut into 1/4 inch slices
  • 1 cup pineapple chunks, drained and juice reserved
  • 2 Tbs. unsalted butter
  • 2 tsp. honey
  • 1 tsp. lemon juice
  • 1/4 tsp. salt (optional)
  • 2 tsp. cornstarch

Place carrots in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until carrots are tender. Drain carrots and return to saucepan. Stir in next 5 ingredients. Simmer over low heat, stirring frequently, until mixture is heated throughout. Combine cornstarch with 1/2 cup reserved pineapple juice. Stir into carrots. Simmer, stirring constantly, until mixture thickens.
