Cheese Casserole
Prep: 15 min, Cook: 55 min.
  • 1 Tbs. unsalted butter
  • 1 red bell pepper, seeded and cut into 1/2 inch dice
  • 4 white bread slices, cubed
  • 3/4 cup shredded cheddar cheese
  • 5 eggs
  • 1 cup whole milk
  • 1 tsp. dry mustard

Preheat oven to 350°F. Melt butter in a heavy nonstick skillet over medium heat. Sauté bell pepper 4-5 minutes or until softened. Remove from heat. Layer a buttered baking dish with bread cubes. Sprinkle bell pepper over bread and top with cheese. Combine remaining ingredients and salt and pepper to taste in a bowl and mix thoroughly. Pour over bell pepper mixture. Bake about 50 minutes or until center is set.
