Preheat oven to 350°F. Melt butter in a heavy nonstick skillet over medium heat. Sauté bell pepper 4-5 minutes or until softened. Remove from heat. Layer a buttered baking dish with bread cubes. Sprinkle bell pepper over bread and top with cheese. Combine remaining ingredients and salt and pepper to taste in a bowl and mix thoroughly. Pour over bell pepper mixture. Bake about 50 minutes or until center is set. This recipe serves 4 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 4 only.
