Chilled Poached Oranges
Prep: 10 min, Cook: 15 min, plus chilling time.
- 4 large navel oranges, ends cut off, peeled
- 1/4 cup orange zest, cut into thin strips
- 1/2 cup water
- 1/4 cup plus 2 Tbs. sugar
- 1/2 cup orange marmalade
Squeeze juice from orange ends into a heavy saucepan. Add zest, water, sugar and marmalade. Bring to a slow boil and cook 4 minutes. Reduce heat to low and add oranges to saucepan. Cover and simmer 4-5 minutes, turning oranges occasionally. Transfer oranges to individual serving dishes. Increase heat to medium and simmer until sauce is reduced by half. Pour sauce over oranges. Chill until ready to serve.
