Chipotle Mashed Potatoes
Prep: 10 min, Cook: 15 min.
  • 2 lbs. potatoes, peeled and cut into 1 inch pieces
  • 2 Tbs. unsalted butter
  • 2 scallions, chopped
  • 2 Tbs. cilantro or parsley, chopped
  • 1/4 cup sour cream
  • 1/4 cup half and half, more if needed
  • 1 tsp. canned chipotle chiles in adobado, or to taste

Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 15 minutes or until tender. While potatoes are cooking, melt butter in a heavy saucepan over medium low heat. Sauté scallions 2-3 minutes or until translucent. Remove from heat and set aside. Drain potatoes and return to same saucepan. Add scallion mixture, remaining ingredients and salt and pepper to taste. Mash thoroughly. Add more half and half if potatoes are too dry.
