Calf's Liver with Lemon Parsley Butter
Prep: 10 min, Cook: 5 min, plus chilling time.
  • 1 Tbs. plus 1 tsp. unsalted butter, softened
  • 1 tsp. lemon juice
  • 2 tsp. parsley, minced
  • 2 tsp. shallots, minced
  • 1-1/2 lbs. calf's liver, cut into 1/2 inch slices
  • 1/8 tsp. white pepper

Turn on broiler. Place butter in a mixing bowl and beat with an electric mixer until fluffy. Slowly add lemon juice. Stir in parsley and shallot. Place on plastic wrap and roll into a log. Chill parsley butter until ready to serve. Arrange liver slices on a broiler pan sprayed with vegetable spray. Season liver with salt and white pepper to taste. Broil liver 1-2 minutes per side or until browned on the outside and pink on the inside. Serve liver with slices of lemon parsley butter.
