Orzo Pasta with Parmesan
Prep: 10 min, Cook: 10 min.
  • 1-1/3 cups orzo or other small pasta
  • 2/3 cup scallions, sliced
  • 2 Tbs. grated Parmesan cheese
  • 1/4 cup chive and onion cream cheese
  • 1/4 cup lowfat milk
  • 1/4 cup pimento, drained and diced

Cook pasta in a large pot of boiling salted water 8 minutes. Add scallions and cook an additional 2 minutes. Drain. While pasta is cooking, combine next 3 ingredients in a bowl. Season with salt and pepper to taste. Beat with an electric mixer at medium speed until smooth. Stir in pimento. Stir cooked pasta into cream cheese mixture, mixing well. Serve immediately.
