Minted Cabbage Salad

- 1 lb. cole slaw
- 1/2 cup fresh mint leaves, chopped
- 1/2 green bell pepper, seeded and cut into julienne strips
- 6 radishes, trimmed and thinly sliced
- 1-1/2 tsp. white wine vinegar
- 1 Tbs. lime juice
- 1-1/2 tsp. parsley, minced
- 1/4 tsp. ground cumin
- 1 tsp. sugar
- 1/4 cup olive oil
Combine first 4 ingredients and salt and pepper to taste in a large bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously until emulsified. Pour dressing over cabbage salad and toss.
