Broccoli Salad with Raisins
Prep: 5 min, Cook: 5 min.
  • 3/4 lb. broccoli, chopped
  • 3 ounces cherry tomatoes, halved
  • 1-1/3 cups bean sprouts
  • 1/2 cup plus 3 Tbs. raisins
  • 1/3 cup olive oil
  • 1-3/4 Tbs. lemon juice
  • 1 clove garlic, crushed

Place broccoli in a steamer basket over boiling water. Cover pan and steam 5 minutes, or until bright green and almost tender. Rinse under cold water. Drain and combine with next 3 ingredients in a bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss.
