Beef Sausages with Mustard Cream
Prep: 15 min, Cook: 15 min.
  • 1/3 cup plus 3 Tbs. dried apricots, finely chopped
  • 1/3 cup plus 3 Tbs. pistachios, finely chopped
  • 1 Tbs. plus 1 tsp. fresh parsley, finely chopped
  • 8 thick beef sausages
  • 8 bacon slices
  • 8 wooden skewers or toothpicks
  • 1/2 cup plus 3 Tbs. thickened cream, whipped
  • 1 tsp. Worcestershire sauce
  • 2 tsp. seeded mustard
  • 1 small red pepper, seeded and chopped

Preheat oven to 350°F. Combine first 3 ingredients in a bowl. Make a cut lengthways down the center of sausages and fill with fruit and nut mixture. Wrap bacon around sausages and secure with wooden skewers or toothpicks. Heat a heavy nonstick pan over medium-high heat. Cook sausages 1-2 minutes, turning until lightly browned all over. Place sausages on rack in uncovered baking dish and bake for 8-10 minutes, or until cooked. Combine last 4 ingredients and use as a topping.
