Carrot, Avocado, and Sprout Salad with Homemade Dressing

- 2-3/4 Tbs. olive oil
- 2-3/4 Tbs. lemon juice
- 1 Tbs. plus 1 tsp. honey
- 1 clove garlic, crushed
- 2-2/3 cups bean sprouts
- 2 medium carrots, grated
- 1 Tbs. plus 1 tsp. sunflower seed kernels
- 2-3/4 Tbs. fresh parsley, chopped
- 1 medium avocado, peeled and sliced
Combine first 4 ingredients in a jar with a tight-fitting lid. Shake well. Combine remaining ingredients in a bowl. Pour dressing over salad and toss.
