Artichokes with Red Wine Vinegar Dressing
Prep: 15 min, Cook: 30 min, plus cooling time.
  • 8 medium globe artichokes, trimmed, tough outer leaves removed
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tsp. sugar
  • 1/2 tsp. fresh marjoram, chopped
  • 1/2 tsp. fresh dill, chopped
  • 1 clove garlic, crushed

Place artichokes in a steamer basket over boiling water. Cover pan and steam 30 minutes, or until tender. Drain and cool. Cut hearts in half and place in a bowl. Meanwhile, combine next 6 ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over artichokes, mix lightly, cover and refrigerate at least 5 hours or overnight.
