Fava Beans and Zucchini Salad
Prep: 10 min, Cook: 10 min.
  • 4 medium zucchini, thinly sliced
  • 9 ounces canned fava beans, drained
  • 1 medium red pepper, seeded and chopped
  • 1 medium onion, sliced
  • 1/3 cup plus 3 Tbs. black olives
  • 7 ounces feta cheese, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic, crushed

Place zucchini in a steamer basket over boiling water and steam for 4 minutes, or until almost tender. Drain, rinse under cold water, drain. Combine beans, zucchini, and next 4 ingredients in a large bowl. Combine remaining 3 ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss gently.
