Mushroom Salad

- 13 ounces baby mushrooms, sliced
- 3 shallots or green onions, chopped
- 1/2 cup plus 3 Tbs. fresh carrots, grated
- 2-3/4 Tbs. fresh parsley, chopped
- 1 Tbs. plus 1 tsp. fresh chives, chopped
- 1 cup bean sprouts
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 2-3/4 Tbs. cider vinegar
- 1/2 tsp. sugar
Combine first 6 ingredients in a medium bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss.
