Mushroom Salad
Prep: 10 min.
  • 13 ounces baby mushrooms, sliced
  • 3 shallots or green onions, chopped
  • 1/2 cup plus 3 Tbs. fresh carrots, grated
  • 2-3/4 Tbs. fresh parsley, chopped
  • 1 Tbs. plus 1 tsp. fresh chives, chopped
  • 1 cup bean sprouts
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 2-3/4 Tbs. cider vinegar
  • 1/2 tsp. sugar

Combine first 6 ingredients in a medium bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well. Pour over salad and toss.
