Cider Vinegar Potato Salad
Prep: 20 min, Cook: 25 min.
  • 3-1/4 medium potatoes
  • 2 sticks celery, chopped
  • 2-3/4 green shallots, chopped
  • 3/4 apple, chopped
  • 2-3/4 tsp. lemon juice
  • 1-3/4 Tbs. cider vinegar
  • 3-3/4 Tbs. olive oil
  • 1-1/4 tsp. lemon juice
  • 1-1/4 tsp. brown sugar
  • 1/8 tsp. dry mustard
  • 1 clove garlic, crushed

Place potatoes in a steamer basket over boiling water. Cover pan and steam 20-25 minutes, or until just tender. Rinse under cold running water to cool, then peel. Cut potatoes into cubes and combine with next 4 ingredients in a large bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well, pour over potato mixture and toss gently.
