Cider Vinegar Potato Salad

- 3-1/4 medium potatoes
- 2 sticks celery, chopped
- 2-3/4 green shallots, chopped
- 3/4 apple, chopped
- 2-3/4 tsp. lemon juice
- 1-3/4 Tbs. cider vinegar
- 3-3/4 Tbs. olive oil
- 1-1/4 tsp. lemon juice
- 1-1/4 tsp. brown sugar
- 1/8 tsp. dry mustard
- 1 clove garlic, crushed
Place potatoes in a steamer basket over boiling water. Cover pan and steam 20-25 minutes, or until just tender. Rinse under cold running water to cool, then peel. Cut potatoes into cubes and combine with next 4 ingredients in a large bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well, pour over potato mixture and toss gently.
