Moroccan Mince

  • 2-3/4 Tbs. olive oil
  • 1 clove garlic, crushed
  • 1 cup pine nuts or slivered almonds
  • 1/2 tsp. ground coriander
  • 1-1/2 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 1 lb. free flowing frozen beef mince
  • 1 cup golden raisins or black raisins
  • 1 tsp. ground chilli powder
  • 1/3 cup plus 3 Tbs. chicken stock
  • 1/8 tsp. black pepper

Heat oil in a heavy nonstick pan over medium-high heat until just foaming. Add next 6 ingredients. Cook 2-3 minutes, stirring constantly, until mince is sealed and pine nuts are slightly golden. Add raisins, chili powder, stock, and pepper. Continue to cook 5-6 minutes, stirring constantly.
