Heat oil and butter in a large frying pan over a moderate heat. Add garlic and cook for 1 minute. Add fish and cook for a few minutes on either side or until fish flakes when tested with a fork, about 10 minutes total. Just before fish is cooked, add basil leaves and lemon or lime juice. Serve with a garden salad.
