Gourmet Italian Focaccia
Prep: 10 min, Cook: 5 min.
  • 1 large store-bought focaccia
  • 2-3/4 Tbs. oil
  • 1 Tbs. plus 1 tsp. garlic, crushed
  • 1/4 lb. salami (optional)
  • 2 large tomatoes, sliced
  • 6 artichoke hearts, chopped
  • 1 large red onion, sliced
  • 1 large green bell pepper, sliced
  • 6 sun-dried tomatoes, chopped
  • 1 tsp. fresh basil
  • black pepper
  • 7 ounces cheddar cheese, grated
  • 1/4 lb. feta cheese, grated

Slice focaccia in half; brush with oil. Add next 9 ingredients.Top with grated cheddar and feta. Cook on the grill about 4-5 minutes, or until cheese melts and browns slightly.
