Olive Cheese Spread
Prep: 10 min, plus chilling time.
  • 2 Tbs. margarine
  • 1/4 lb. ricotta cheese
  • 2 ounces grated cheddar cheese
  • 2 tsp. chives
  • 3/4 tsp. capers, chopped
  • 2 Tbs. stuffed olives, sliced
  • 1-1/2 tsp. lemon juice
  • 1/2 bunch parsley, chopped

Place margarine, ricotta and cheddar cheese in food processor or blender and process until smooth. Stir in chives, capers, olives and lemon juice. Chill until firm. Shape cheese mixture into balls and coat with chopped parsley. Chill before using. Serve with crackers or toast.
