Chutney Glazed Fish
Prep: 10 min, Marinate: 30 min, Cook: 5 min.
  • 2 tsp. freshly grated ginger root
  • 2 cloves garlic, crushed
  • 1/3 cup prepared mango or other sweet chutney
  • 3/4 tsp. ground coriander
  • 3/4 tsp. ground cumin
  • 3/4 tsp. ground turmeric
  • 1-3/4 Tbs. oil
  • 4 white fish cutlets
  • 2/3 cup plus 3 Tbs. plain lowfat yogurt
  • 3/4 cucumber, finely diced

Combine ginger, garlic, chutney, and spices well. Marinate fish in mixture for 30 minutes. Heat oil in a saucepan over a moderate heat; cook fish 4-5 minutes on each side, or until cooked. Combine yogurt and cucumber together well. Serve fish with yogurt and salad.
