Basic Potatoes
Prep: 5 min, Cook: 10 min.
- 1 lb. russet potatoes, peeled and cubed
- 1 Tbs. plus 1 tsp. unsalted butter
Cover potatoes with water in a medium saucepan and bring to a boil. Lower heat. Cover saucepan and simmer 10-15 minutes, or until potatoes are tender. Drain water. Add butter and season with salt and pepper to taste. Toss gently.
