Tex-Mex Casserole
Prep: 15 min, Cook: 1:00.
  • 1-1/4 cups cheddar cheese flavored crackers, crushed
  • 3/4 lb. creamed corn, thawed if frozen
  • 1-1/2 cups Italian style peeled tomatoes, drained
  • 1/4 lb. canned chopped green chili peppers
  • 1 onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 2 cloves garlic, crushed
  • 3 eggs
  • 1 Tbs. chili powder
  • 3/4 lb. ground beef

Preheat oven to 350°F. Combine 3/4 cup crushed crackers and next 8 ingredients in a bowl. Season with salt to taste and mix thoroughly. Add meat and knead with hands until well mixed. Transfer to a buttered deep baking dish and sprinkle with remaining crackers. Bake 1 hour, or until center springs back when pressed with a finger.
