Preheat oven to 350°F. Combine 3/4 cup crushed crackers and next 8 ingredients in a bowl. Season with salt to taste and mix thoroughly. Add meat and knead with hands until well mixed. Transfer to a buttered deep baking dish and sprinkle with remaining crackers. Bake 1 hour, or until center springs back when pressed with a finger. This recipe serves 6 people.
