Cheese and Fruit Cocktail
Prep: 15 min.
  • 2 eating apples
  • 1/8 tsp. lemon juice
  • 2 sticks celery, chopped
  • 2 ounces Edam cheese, diced
  • 1/4 lb. seedless grapes, cut in half
  • 1/2 lettuce, shredded
  • 1 orange, juiced and grated
  • 2 Tbs. nonfat yogurt

Chop the apples, place in a bowl, and sprinkle with lemon juice. Add the celery, cheese, and grapes and mix together. Place a little shredded lettuce in the base of 4 dishes. Pile the cheese and fruit mixture on top. Mix the orange rind, juice and yogurt together, then pour a little over each cocktail. Serve chilled
