Cheddar Egg Log with Salad
Prep: 15 min, plus chilling time.
  • 4 hard-boiled eggs, chopped
  • 9 ounces cheddar cheese, grated
  • 1 clove garlic, crushed
  • 2 Tbs. mayonnaise
  • 2 Tbs. whipping cream, or heavy cream
  • 1 Tbs. parsley, chopped
  • 1 head lettuce
  • 1/2 cucumber, sliced
  • 1/2 green pepper, cored, deseeded and sliced
  • 4 tomatoes, sliced

Place the eggs, cheese, garlic, mayonnaise, cream and chopped parsley in a bowl. Mix well and add salt and pepper to taste. With wet hands, shape the mixture into a roll. Wrap in foil and chill in the refrigerator for at least 1 hour. Arrange the salad ingredients at the ends of an oval serving plate. Slice the log into 8 pieces and arrange along the middle of the plate. Serve with rolls and butter.
