Prep: 10 min, Cook: 40 min.
- 1 Tbs. olive oil
- 1 large onion, thinly sliced
- 1/2 cup chicken stock or water
- 1 cup dry white wine
- 1 Tbs. sugar
- 1 lb. green beans, trimmed and cut into 2 inch pieces
Heat oil in a heavy nonstick skillet over medium high heat. Sauté onion 3-4 minutes until softened. Add remaining ingredients, except green beans. Partially cover saucepan and bring to a boil over high heat. Reduce heat to medium high and simmer 35-40 minutes, stirring occasionally until onion has caramelized and liquid has almost evaporated. Remove from heat and set aside. Place green beans in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until tender. Transfer green beans to a serving bowl. Add onion mixture and toss. Season with salt and pepper to taste.
