Tuscan Pasta with Tuna
Prep: 20 min, Cook: 30 min.
- 1/2 cup carrot, chopped
- 1/2 cup celery, chopped
- 1/3 cup shallots, chopped
- 1/4 cup fresh parsley, chopped
- 3 Tbs. capers, rinsed and drained
- 3 Tbs. golden raisins
- 3 Tbs. pine nuts or slivered almonds
- 1/2 tsp. chili pepper flakes
- 2 Tbs. olive oil
- 1/2 cup dry white wine
- 1 anchovy, chopped
- 6 ounces can tuna
- 1 tsp. basil
- 1 tsp. oregano
- 1/4 cup Romano cheese
- 3/4 lb. mostaccioli or small tube pasta
- 1/2 cup clam juice
Combine first 8 ingredients in a food processor or blender and process until chopped very finely. Heat oil in a heavy nonstick skillet over medium heat.
Transfer chopped vegetables to skillet. Cover and sauté |
