Kahlua Chocolate Mousse
Prep: 10 min, Cook: 5 min, plus chilling time.
  • 1/4 cup plus 2 Tbs. sugar
  • 2 Tbs. cornstarch
  • 2 large eggs
  • 1 cup water
  • 1/4 lb. unsweetened chocolate, finely chopped
  • 2 Tbs. Kahlua or other coffee liqueur
  • 1 cup heavy cream, whipped to stiff peaks

Combine sugar and cornstarch in a saucepan. Whisk in egg and water. Bring to a boil over medium heat, whisking constantly. Simmer 1 minute, whisking constantly. Remove from heat and stir in chocolate and Kahlua. Stir until chocolate is melted. Transfer mixture to a metal bowl and set bowl in ice water. Beat mixture with an electric mixer until cooled and lighter in color. Gently fold in whipped cream until incorporated. Spoon mousse into dessert cups or long-stemmed glasses and chill until ready to serve.
