Ham, Vegetable, and Lettuce Salad
Prep: 10 min.
  • 1/2 lb. european salad (or other packaged salad mix)
  • 1-1/3 cups fresh carrots, grated
  • 1/4 cup cut sun-dried tomatoes, drained
  • 8 cherry tomatoes, quartered
  • 1/2 lb. turkey ham, chopped
  • 2 tsp. lemon juice
  • 2 Tbs. olive oil
  • 2 Tbs. Dijon mustard
  • 1/2 tsp. sugar
  • 1 cup plain lowfat yogurt
  • 1/4 tsp. salt (optional), or to taste
  • 1 cup cool herb croutons

Combine first 5 ingredients in a bowl. Combine remaining ingredients, except croutons, in a bowl. Add pepper to taste. Whisk vigorously. Pour dressing over salad and toss. Serve with croutons.
