Hearty Greek Salad

- 3 cups spinach leaves, rinsed, tough stems discarded and torn into pieces
- 1/2 lb. european salad (or other packaged salad mix)
- 2 tomatoes, cut into wedges
- 1/2 cup cucumber, peeled and thinly sliced
- 1/2 cup red bell pepper, seeded and thinly sliced
- 1/4 lb. black olives, pitted and thinly sliced
- 1/4 lb. feta cheese, crumbled
- 2 Tbs. plus 2 tsp. olive oil
- 1/3 cup capers, drained and rinsed
- 2 tsp. white wine vinegar
- 1/4 cup water
- 2 tsp. lemon juice
- 1 tsp. dried dill, or 2 tsp. fresh dill, chopped
- 1/2 tsp. salt (optional), or to taste
- 1 cup cheese & garlic croutons
Combine first 7 ingredients in a salad bowl and toss. Combine remaining ingredients, except croutons, in a jar with a tight-fitting lid. Add pepper to taste. Shake vigorously. Pour dressing over salad just before serving and toss.
